The following recipes have been chosen because they are perfect for re-usable plastic containers so no plastic wrapping is needed ever!
Tasty Vegie Rice
Ingredients:
1 cup basmati rice 1 tsp turmeric 2 tsp olive oil 2 eggs lightly whisked 2 bacon rasher, chopped 1 cup frozen peas 4 spring onions, ends trimmed, sliced diagonally 2 carrot, peeled and diced 1 cup bean sprouts Optional Sauce 2 tsp light soy sauce 1 tsp sweet chilli sauce Method: 1. Place rice, chicken stock and turmeric in a saucepan. Place over high heat and bring to a simmer. Reduce heat to low and cook,covered,10 minutes or until rice is tender and liquid is absorbed. remove from heat and set aside, covered, for 5 minutes. 2. Heat the oil in a frying pan over high heat and cook bacon. Remove from pan and set aside. 3. Add the egg and spread to cover the frying pan base. Cook for 1-2 minutes or until almost set. add the rice, cooked bacon, peas, shallots, carrot, soy sauce, sweet chilli sauce and bean sprouts and stir-fry, breaking up the egg, for 2-3 minutes or until rice is heated through. |
Basic MuffinsIngredients:
2 cup self-raising flour 1/2 cup sugar 1 egg beaten 1/4 cup oil 1 cup milk Method: 1. Preheat the oven to 180C 2.Place all ingredients in a medium bowl 3. Mix until combined. 4. Bake at 180C for approximately 20 minutes. |
Instead of an individually wrapped muesli bar, try freezing a batch of muffins and bringing one to school in a plastic container each day.

Add whatever you desire to these basic muffins to make them even more delicious than a store bought muesli bar.
Try: Choc chips, mashed banana, grated apple, frozen berries, or even something savoury like cheese and chives, zucchini and spinach or pumpkin and sunflower seeds. Don't forget, if you are making a savoury muffin don't use any sugar. |

Soup
Ingredients:
For an easy alternative, buy a packet or can of soup mix and just add milk/water. If you have spare time, try and create your own soup from scratch. Try not to forget that cans or cardboard boxes of soup mix can be recycled. Method: 1. Empty soup sachet, into an airtight thermos. 2. Add milk or water. 3. Take your thermos to school with a spoon and enjoy! Pikelets
For an easy alternative but ready made pikelet mix and just add water.
Rinse the pikelet mix container when empty and re-cycle. Or follow the quick and easy recipe below. Ingredients: 1 1/4 cups self-raising flour 2 tablespoons caster sugar 3/4 cup milk 60g butter, melted. 1 egg Extra butter, for greasing the pan Method:
Chips/Biscuits
For an every-now-and-again treat if you really feel like chips or biscuits try not to buy a big packet of individually wrapped small packets! These high-fat treats are usually cheaper bought in one big packet. You can open it, select a few to put in a re-usable plastic container and fold the big packet down sealing it with a peg for the next day. Take the treats to school in the plastic container and once again - no waste in your lunch box and only one packet to throw away at the end of the week! Stir-Through Pasta
Ingredients: 1 Packet of any noodles or pasta 1 jar of stir through pasta sauce Grated cheese Method: 1. Cook 1/2 cup pasta according to packet directions. 2. Drain and put cooked pasta in re-usable plastic container 2. Stir through pasta sauce to taste (lots or a little depending on the way you like it!) 3. Sprinkle grated cheese over pasta and sauce. 4. Enjoy! Fruit Bars
Ingredients: 1. 1 1/4cups rolled oats 2. 1 cup dedicated coconut 3. 1/2 cups wheat germ 4. 1/4 cups oat bran 5. 1/4 cups sunflower 6. 1/4 cups pumpkin seeds 7. 2 tbls sesame seeds 8. 1/4 cups almonds-chopped 9. 1/4 cups pecans-chopped 10. 200g butter 11. 1 cup sugar 12. 1/2 cups honey Method: 1. Mix rolled oats, dedicated coconut, wheat germ, sunflower, pumpkin seeds, sesame seeds, sunflower seeds, pump, sesame, almonds, pecans, then toast. 2. Mix in fruit and set aside. 3. Melt 200g butter, 1 cup sugar, 1/2 cups honey. 4. Mix into muesli. 5. Put in trays to cool in fridge until hard. |
